Corn soup

Ingredients

3 cans Corn
1 Red Pepper - diced 
1 Onion - chopped  
1 Garlic Cloves - crushed  
6 cups chicken stock
1 ½ cup Whipping Cream -  for cooking
1 ½ tbsp Oil
Salt and Pepper

Directions

  1.  In deep nonstick pan, add 1 tbsp oil and onion and stir for 1 minutes until yellow, add garlic and 2 ¼ can corn and stir for another 2 minutes.
  2. Add chicken stock, season with salt and pepper and leave to boil, reduce heat and simmer for 30 minutes. Remove from heat and leave to cool.
  3. Meanwhile, in small saucepan, add remaining oil and red pepper and stir for 2 minutes then add remaining corn and stir for another 2 minutes.
  4. In blender, pour soup and blend over medium speed for 2-3 minutes until smooth. Return to pan and bring to boil, then reduce heat, add cream and red pepper and corn mix, stir and simmer for 5 minutes.

 You can add diced chicken boiled.
