Peppers (green, yellow and red)
Peppers are fruit vegetables. All kinds of peppers are useful. Green peppers add a great flavor to any recipe. Yellow and red peppers have a sweat taste; they add color to the dish as well as the sweat taste.

Buying tip
Peppers should be firm, shiny, bright, not wrinkled with no cuts or scratches. |
Best season
They are usually available all-year round but the prices differ according to season. |
Washing peppers :
Wash peppers with a sponge under running water. You can also use soap but you have to rinse well. Wash peppers just before you are ready to use them.

| Cutting Peppers : |
| 1. With the tip of a sharp knife, make a circle around the top of the pepper to be easily and totally removed. |

| 2. Take out the seeds and their ribs from inside the pepper. |

| Slices (rings) : |
| Hold the pepper in your hand or put it on one side on a chopping board. With a sharp knife, slice it horizontally to the thickness that suits the recipe. |

| Squares : |
| With a sharp knife, make a neat cut lengthwise to open the pepper and make it into a large flat rectangle. |

| Lay it on a chopping board and cut into 2 parts crosswise. |

| Cut each part into squares the size that you like. |

| Sticks : |
| Cut pepper lengthwise into 2 parts. Lay one part on a chopping board and cut it vertically into sticks about ½ cm thin. If the sticks are too long, cut them in half. In order to cut best sticks, get firm and smooth peppers. |

| Dice : |
| Cut peppers into sticks, then cut sticks into dice. Their size depends on the recipe. You can also cut peppers into rings, then cut each ring into dice. |

| Storing Peppers : |
| Store peppers fresh and unwashed in a dry cold place, refrigerator drawer, for about 3-5 days. |
