     Beets

Beets are a root vegetable which are known to be nutritious, low in fat, and usually available all-year round. They have a very sweet taste and are usually used in salads. Baby beets are sweeter and faster-cooking than larger beets.

 

 Buying tip

Select the ones that are round, firm, smooth and deep brownish red.
 

 Best season

Usually available all-year round but are best from October till March.

Washing Beets 

Wash beets under running water rubbing them well with your fingers or   with a sponge until their surface is smooth and there is no dirt left on them. Any dirt left will penetrate the crust while boiling.

Boil unpeeled in a deep pan with water over medium heat until tender, about 40-50 minutes. Drain and leave to cool.

The crust will come off very simply and smoothly. Cut the stem and the top.

Cut beets in any shape you like.

Storing Beets

Store beets unwashed and unpeeled in a cold dry place, refrigerator drawer, for about 2-3 days.
