     Green Beans

Green beans are part of the black-eyed peas family which are quite similar to green beans in the way they are prepared but are not considered substitutes for them. Black-eyed peas are famous in Egypt when they are stewed using the Egyptian way in tomato sauce.

 

 Buying tip

Select the ones that are bright, smooth, and have a velvety crust with no cuts or rusts.

 Best season

Usually available all-year round. Black-eyed peas has a very short season, starting July till September

Washing and cutting green beans

Cut both ends of the beans. Cut each bean crosswise, diagonally or straight, into 2, 3 or 4 pieces depending on its length and your preference.

 

Some people prefer to cook green beans as a whole without cutting them at all. Wash well under running cold water in a bowl or colander then drain.

Boiling green beans

Boil green beans in a deep pan ½ filled with water, covered, over medium heat for 15-20 minutes.

Freezing and defrosting green beans

Freeze green beans after cutting and washing. Make sure to drain well so that it doesn’t contain any water. Put in a plastic bag, remove excess air, close well and place in the freezer.

To defrost, just get the bag out of the freezer and leave it until ice melts. If you’re going to boil or cook them you don’t have to defrost.

Store unwashed for 3-5 days in the fridge.
