     Peas

Peas are sweat vegetables loved by almost everybody. Peas are considered to be carrots’ twin; they are usually used together in so many ways in a variety of recipes.

 

 Buying tip

Select the ones that are plump, bright colored, smooth, and have a velvety and crispy pods (crusts) with no cuts or rusts..

 Best season

It is best since early winter, November, all the way till end of February

Peeling and washing peas

Pull off the tip of the green pod and pull down the strings on both sides splitting the pea in two halves. Scrape out the peas with your fingers and discard the pods.

 

Wash under running cold water in a bowl or colander then drain well.

Boiling peas

Boil peas in a deep pan half-filled with water, uncovered, over medium heat for 10-12 minutes.

Freezing and defrosting peas

Freeze peas after peeling and washing. Make sure to drain well so that it doesn’t contain any water. Put in a plastic bag, remove excess air, close well and place in the freezer.

To defrost, just get the bag out of the freezer and leave it until ice melts. If you’re going to boil or cook them you don’t have to defrost.

Storing peas

Store for 1-2 days in the fridge, whether in their pods or peeled.
